i buy liver and fix liver and onions with calf liver or beef liver. calf liver to us is more tender. also we buy chicken livers . this is basically a persons choice if they want to eat these . now tongue and brain i just can't bring myself to try those

Never had snails or brain and don't plan to. Tried tongue once and I mean tried (just a bite). Was okay but I never had it again and don't plan to.

Beef liver and Chicken liver is good though. I like chicken liver better.

won't eat snails . i use to cook chicken gizzards when i fixed the chicken livers but neither hubby or i can chew them any more. need to buy some liver but this is once meal i will have to cook not sure if hubby would want to

I tried sweet breads once also. That was okay but I probably would not order it again. I never liked gizzards but I did eat the chicken hearts when I was younger. Not anymore though!

those too. yum. hubby does most of the cooking here any more with me being on oxygen 24/7. i do make the gravy if we need it for something

I know liver is good for you, but not only can I not eat it but it makes me gag if I even smell it cooking anywhere. sick

It's somewhat cultural. My mother grew up in Eastern Europe and fixed tongue, liver, and pickled pigs feet. I never ate the tongue or pigs feet. But I do like well-prepared chicken or beef liver with sauteed onions.

Because it's delicious! Like anything else, it's what you are raised on and what your tastes are. I was raised on it because it was cheap. Now it isn't cheap anymore, but still love veal kidneys, liver, chicken liver, hearts, gizzards. My mom made tongue and brain and it was nauseating to me, but we ate it because it was whats for dinner. I would not choose to eat it again. And snails in butter are heavenly!

Yes. Often it's a matter of using as much of the animal as possible. For example chitterlings were what slaves were given when the master butchered a hog. Chitterlings (chittlins) continue to be a soul food staple.

"When slavery was legal in America, slave owners commonly fed their slaves as cheaply as possible. At hog butchering time, the best cuts of meat were kept for the master's household and the remainder, such as fatback, snouts, ears, neck bones, feet, and intestines, were given to the slaves."

While today it's considered a delicacy, lobster was once a poor man's food. Thanks to its overabundance, people quickly became sick of the shellfish and only fed it to animals, prisoners, and indentured servants. Now go buy one $$$$.

I like and cook (lamb's) liver and in the past also used to prepare and cook ox tongue.
But tongue requires a LOT of messing about !!

Never tried preparing, cooking or eating either snails or brains, though ....

These items don't interest me. I remember eating liver as a kid...one of those meat cuts you don't see much any more. I think Drac is close to the mark...these items were regular dinner table fare back in the ole days before supermarkets started carrying all kinds of cuts and types of meat...and fruit 365/24/7

I buy most of my meat from a butcher who runs his own independent shop or who has a franchise in a larger store or supermarket.
At his "own" store I can still buy any cut of meat I wish but at the franchise he offers less choice. Sticking to the most popular items.
But what I won't buy is any kind of "pre-packed" meat. I want to see it "before" it gets packed !!
I am an absolute fusspot where fresh meat is concerned yes yes

Who is "he" family?

I tried octopus from a can years ago. It was okay. I also made stuffed squid tubes years ago which was pretty good.

I thought puffer fish is poisonous though??

When I was young they used to sell frozen fried oysters which I liked a lot. When I got a little older I tried some oyster stew type dish from a restaurant and could not eat it. I know people eat raw oysters. I would never try that. Too slimy. Never tried mussels.
