I tried sweet breads once also. That was okay but I probably would not order it again. I never liked gizzards but I did eat the chicken hearts when I was younger. Not anymore though!

Because it's delicious! Like anything else, it's what you are raised on and what your tastes are. I was raised on it because it was cheap. Now it isn't cheap anymore, but still love veal kidneys, liver, chicken liver, hearts, gizzards. My mom made tongue and brain and it was nauseating to me, but we ate it because it was whats for dinner. I would not choose to eat it again. And snails in butter are heavenly!

Yes. Often it's a matter of using as much of the animal as possible. For example chitterlings were what slaves were given when the master butchered a hog. Chitterlings (chittlins) continue to be a soul food staple.
"When slavery was legal in America, slave owners commonly fed their slaves as cheaply as possible. At hog butchering time, the best cuts of meat were kept for the master's household and the remainder, such as fatback, snouts, ears, neck bones, feet, and intestines, were given to the slaves."

"liver, snails, beef tongue and brain ??" I like and cook (lamb's) liver and in the past also used to prepare and cook ox tongue. But tongue requires a LOT of messing about !! Never tried preparing, cooking or eating either snails or brains, though .... [ Just don't fancy either ]

These items don't interest me. I remember eating liver as a kid...one of those meat cuts you don't see much any more. I think Drac is close to the mark...these items were regular dinner table fare back in the ole days before supermarkets started carrying all kinds of cuts and types of meat...and fruit 365/24/7

I buy most of my meat from a butcher who runs his own independent shop or who has a franchise in a larger store or supermarket. At his "own" store I can still buy any cut of meat I wish but at the franchise he offers less choice. Sticking to the most popular items. But what I won't buy is any kind of "pre-packed" meat. I want to see it "before" it gets packed !! I am an absolute fusspot where fresh meat is concerned
