I use eggplant in my lasagna. Zucchini is amazing with sauce because it takes on any flavor you add to it.
Why don't you try it as written if you haven't tried it to know if you like it or not? Both Artichoke hearts and Zucchini are delicious!

Like I told you in another post, you don't have to follow a recipe to the letter... add whatever you like! Recipes are just a suggestion of ingredients. I look at them, but seldom follow them exactly.
Once again, weeds are my life!
