Personally, I wouldn't put the shredded carrots into the crab cakes if they are already made up. Carrots keep in the refrigerator for a very long time. When mine start to get old, I just cut them up and toss into a pot of soup. You can also freeze them. Just chop, slice or shred, put into boiling water for a minute or so, then into cold water and drain well. Put into ZipLoc bags and freeze for use later.

If you're making the crab cakes from scratch, some shredded carrot might work. You might add some extra bread crumbs since the carrots would add moisture. Try making just one or two at first to see how they come out.
