Well, it appears that Adventure Classic Gaming has managed to score an interview with the developer of Simon the Sorcerer 5, Carsten Strehse at Silver Style, to talk about the game:

I thought this was interesting: I think that's right -- some jokes just won't translate well and you have to come up with new ones.

Dave. I'm with Mad in that I love the Simon games. I thought the third game had a bit too much arcade for me but the humor in these games is excellent. Thanks for posting the link.
