My10, L4L's daughter and Midgie can't have gluten so hopefully when they come on you'll get good tips. I am sure there are lots of others here too.

My10 I can't get to my computer right now but should be able to later today. I'll try to get some links up for you then. There is a lot of info available on this subject.

here is another question, my youngest daughter has food allergies and is having to use rice flour instead of all purpose flour to make a easy white sauce for creamed peas. my recipe calls for 2 tbls melted butter, 2 tbls flour, 1 cup milk. microwave 2 minutes stirring every 30 secs. her sauce didn't thicken up . so how much rice flour should she of used or what?

My, she could have used a GF all purpose flour to get the thickening...rice flour is not a 1 to 1 swap for A.P. flour.

Yep, My10, I can relate.

The Mayo Clinic has a good website with lots of information that I would trust. This one has lots of info also.

I just recently sent my daughter a link to this site for GF baking recipes.

There are oodles of GF recipe books available now but I haven't used any of them as daughter doesn't live with us anymore. When she first had to give up gluten, information was scarce.

The most important thing is to read read read ingredients....even on things that you have safely eaten before as those ingredient lists change from time to time. Also to be aware that just because your waiter tells you a dish is GF, there is a good chance it isn't. Daughter has had to give up eating out for the most part. luck

Hi Rugs. Just read this post as I am home from a late work shift. I have been wheat and GF for some time now. If you can find store that carries GF you can find many alternatives to wheat flour. I have made GF pancakes, ask how members know I love BB pancakes (heh, heh). Usually there will be at least a whole isle of special items for food allergies as I am. Good luck and let me know if I can help.

I'll be going with my clients to Connecticut for a family wedding to assist with Barbara's needs until Sunday. I'll be back on Sunday night. See you then.

Midgie sleep hearts

Just do it.

My10 my daughter has Celiac disease and has to eat a gluten free diet. The safest food to eat for her is food that is "Certified gluten free" on the label. That means it is prepared in an environment where there is no chance for cross contamination.

When food is labeled Gluten Free it can still have gluten in it and you need to call the manufacturer to find out the ratio of gluten that could be in that product.

My10, something else to be aware of is that if you have allergies to one thing, you can be cross reactive to something else. For instance, I'm allergic to ragweed. Because I'm allergic to ragweed, Cantaloupes and Honey Dews make me react also although watermelons, which is in the same group, does not.
