What size casserole dishes do you already have? One that's close in size will likely work.
As far as the potatoes are concerned, just time consuming as long as you have a potato peeler.
The dish looks delicious.

Family, it's not hard to slice potatoes 1/4 inch thick. If you find that you are doing a lot of recipes that call for precision slicing, you can buy a mandoline. A good one will let you select the width of the cut you need. Amazon has a good selection. I have one that I use when I need veggies to be uniformly cut and I need a lot of them. As long as you use the food guard, they can be a real time saver.

Like Sparkle says, that's for chopping things like onions. It won't slice. This is a mandolin for slicing, although there are tons of other ones out there. Mandolin

Honestly family, you don't really need any fancy tools. A good sharp knife will do the job. It will just take time. The mandoline is a great tool, but I personally don't like it because the blades are extremely sharp. I have a friend who cut off part of a finger while using one. I'm just a bit too clumsy to take the risk.
