Why don’t you want to use provolone? I looked up some dump dinner pasta recipes and different recipes call for different cheeses. For that matter, just leave out the provolone if you don’t like it amd add a bit more of the other cheeses. Cheddar doesn’t melt as well as some of the others and your casserole may turn out a bit stickier. Up to you.
Also, see what I said on the other topic you posted re: adding meat.
