If you're talking about sauerkraut, it's a matter of personal preference. There's more than one kind. You can get generic sauerkraut, that just has a tart flavor, or you might come across some that's a little sweeter. I prefer what's termed as sweet Bavarian style, with caraway seeds mixed in with it.
Again though, it's all a matter of personal preference whether you think it's good or not. You're the only one who would know that for yourself.
I feel a lot more like I do now, then when I first got here

Do you mean sauerkraut? Believe me, as Trail says, it's a personal preference! We make our own by fermenting cabbage in a 10 gallon crock in the basement every year. The only way to know is to try it! We love it, but lots of people hate it.

Just a tip. If you decide to prepare it, you should rinse the saurkraut (unless it’s already seasoned) and drain thoroughly. Then you might want to add some brown sugar to sweeten it before cooking. At least, that’s how I prepare it.

And I prefer it straight out of the jar even cold! I don't drain or rinse either because the brine is what gives it that "signature" taste! But most people do something like Sparkle does. I would try it as-is and then decide what you want to do with it.
Our home made sauerkraut was given the "seal of approval" by our German nephew Guenter when he was here one summer!

Exactly, Sparkle. The version with caraway seeds is from a different part of Eastern Europe too. My husband's first wife was from Germany and she used caraway in her sauerkraut. She was from the northern part of Bavaria. This is exactly why sauerkraut is such an acquired taste! We love the brine which keeps the taste quite strong. My mother always rinsed hers too.

Fermentation is a big "thing" right now because it is supposed to very healthy. You can even buy fermented pickle juice and fermented brines to drink!

Sauerkraut is good if it's fresh. There's a brand called Bubbies that is in a refrigerated part of the grocery store, and which is the next best thing to making it yourself or buying it fresh from a Farmers Market. I think the canned kraut is awful though. When I was a kid I thought it was OK on a hotdog along with mustard. The first kraut I made was from a big head of red cabbage. It turned out really well, though there was so much of it it took a long time to eat it. I used something like this fermentation jar to make it https://www.amazon.com/Home-Brew-Ohio-Bubble-Airlock/dp/B01AK8QKBO/qid=1603206910I would not recommend making that much unless you know you like it though. Better to buy a jar of Bubbies kraut or similar to see if you like it. Keep in mind I've always liked sour things. When I was a kid I'd suck on lemons. So it is not a big deal for me to drink sauerkraut juice or eat sauerkraut straight out of a bowl. I've also tried making pickles with the fermentation jar, but they were mushy and nowhere near as successful as the sauerkraut. Besides the kraut the only successful fermentation I made was some Kimchee, which was similar to kraut only had daikon radish and carrots in it.

I totally agree on the bagged or jarred sauerkraut over the canned. The canned is tasteless to me! We made 50 quarts of it this summer! But we give a lot of it away to friends and family.

yes, that is what i am talking about, i went to the deli, for a foot long hotdog, they want to know if i wanted that on it. You should try it. Like I said in a previous post, I used to like sauerkraut on hotdogs when I was a kid. It's certainly less sour that way, because there's so much more hotdog and bun than there is kraut.

My mom used to make it with some kind of tomato sauce mixture to go with pork chops... That's interesting, my Grandmother used to make a similar dish only with Chicken. She used to braise pickled cabbage and onions in chicken fat, then add homemade tomato sauce and a whole cut up chicken. Then stick in the oven until the chicken was done. That was one of the reasons I always liked going there for dinner. Never could duplicate the recipe though. Her method of pickling the cabbage and onions was lost and I think that's what added the really good flavor.

Now, THAT'S got to be the most unusual way of doing cabbage I've ever heard!
This one sounds pretty good...
1 cup red cabbage thinly sliced 1 red onion thinly sliced 2 garlic cloves minced 1/2 cup white vinegar 1 tbsp pure maple syrup or date sugar 1 juicy lime juiced 1/2 tsp red pepper flakes optional – for heat 1/2 tsp dried dill 1/2 tsp oregano
Instructions In a clean jar, add all of the ingredients and combine well. Cover and store the jar in a warm, dark place for 2-4 hours then transfer to the refrigerator. Serve on burgers, salads, and tacos.
