pickled onions

Has anyone made these? I think I would like to try and don't know the best recipe. there are quite a few out there and I have never made them. plus, do you think I should use red onions or just cheap yellow onions?

Even though raw onions are one of the few foods I absolutely loathe, I do indeed have a recipe! It was my mother's. You just mix everything together and bring it to a boil. Turn the heat off immediately and let it cool.

1 red onion, finely chopped or cut into thin slices
½ cup red wine vinegar
3 tablespoons distilled white vinegar
1 ½ tablespoons salt
2 teaspoons white sugar

This isn't really a pickled onion, but the post reminded me of something we serve as a topping with Adobo Chicken that's really good and super simple. Just marinate sweet onion slices in cider vinegar, with some Mexican Oregano, and black pepper for a few hours. They also taste really good on beef sandwiches or burgers, and when drained keep for about a week or so. grin

I love raw onions too! In fact, when I make salsa, I wind up eating the onions before putting them in the jar! I knew Drac would have something. Thanks. I will try it and let you know if it is any good. Since I love onions, this is going to be my Christmas present to myself. I am trying a new recipe for beef jerky today so I am in a whimsical mood and trying new things. I will let you know how the onions turn out.

Definitely let us know what you think of them! I'm trying a new pie recipe today too. I only make pies once a year and usually just make the same ones. This is a refrigerated pumpkin pie with apple butter and whipped cream in a crust made of gingersnap cookies! I made some gingersnaps Monday.
