Family, I'm confused. I make mashed potatoes in the summer, and have made lasagna in the summer when I didn't mind heating up the house with the oven. Are you asking about a specific recipe?

I've never made mashed potatoes from baked. I peel and cut up the potatoes, put in a pot with a cup of water, cover, bring to a boil and then simmer about 20 minutes or until they are nice and soft. Mash, add butter, milk, and salt to taste.
P.S. Why do you think fast food is making you sick? Do you eat a lot of it?

You can make baked potato's in the summer. If it is the heat you are concerned with,you can put them on the barbeque (if you have one). Then after their baked,you can put them in a pot and mash them,with whatever ingredient you want.

There are some really good 'dried' mashed potato mixes. Add water and butter and milk if you like. Easy and quick if you don't have the time to peel and cook whole potatoes. I like the ones that come in a one-serving cup. So easy in the microwave. I think the brand that's best is 'Idahoan' and comes in red packets or cups.
If you use raw potatoes, just be sure they aren't greenish in color and don't eat the 'eyes' that are sprouting. Sometimes summer potatoes start to sprout and grow new plants. The eyes can be toxic. Peel and wash.
Also, there are some pretty good microwave lasagnas out there. I like Marie Callendar's and Stouffers best. Quick and easy. No boiling the noodles, etc.
