Mr. Bill, I had a vague memory of having Riddle of the Sphinx, so I dug through my old games. Yup, I've got the original disks. I'll load it up on my Windows 7 and let you know. I dont have The Omega Stone.
EDIT: I put in the first disk and it went through all the installation to the point where it asked if it should install Quick Time 5 which is required to run the game. I just clicked on OK and then it said I already had a newer version and I should uninstall it if I wanted to install v. 5. I just exited the screen and double clicked on the game icon on my desk. The game opened and I played for about 1/2 hour. I saved a game and loaded a game. The panning worked fine. My hand cursor sort of blinked sometimes, but otherwise the game played just fine for that short period of time. Even though this is a Windows 95/98 game, I did not even have to install or play in compatibility mode. Playing in compatibility mode may help with the occasional blinking cursor.
EDIT: Mr. Bill, I played for about an hour this morning and the hand cursor didn't blink. I'd give this game a solid OK for playing on 64-bit Windows 7 with no tweaking necessary.

Which version does she have? I think the original version from 2000 came with QuickTime 4, not QuickTime 5, so there could still be a version difference. There is also ***this***, which is from 1982 and not the same game at all. That certainly wouldn't install because it's DOS (16-bit).

Mr. Bill, you could also suggest that she try installing in compatibility mode. I've had that get me past a couple of bumps in the road with older games in Win 7.
