Good Saturday morning. Back to HOT today!

Decided to marinate some chicken breasts and put them on the grill for supper. I have lots of tomatoes now, so am going to make a "Guenter Salat." When the Germans are here, Guenter makes this with sliced tomatoes, onions, a good balsamic vinegar with EVOO (extra virgin olive oil) and a bit of fresh mozzarella cheese.

In the end we didn't get that rain; it's just been overcast and gloomy and cool. I was actually contemplating putting the fire on this morning.

I've never heard of Guenter salad but it sounds delicious Draclvr.

Good Sunday morning. It's beautiful this morning, but still headed for the upper 90's all next week. I think a couple of day are predicted to break 100 degrees F.

The marinated grilled chicken and the Guenter Salat were outstanding last night. Tonight I'm making another family favorite - Aunt Cindy's Tacos as my boys called it when they were little. There are no tacos, but rather flour tortillas with refried beans and taco seasoned hamburger rolled up and placed in a casserole dish. You cover it with a sauce made of sour cream and cream of chicken soup and then shredded cheese. I'm opening a jar of the new salsa to put on top.

Putting on my smoked pepper/garlic mash to ferment today.

Good morning everyone.

I wish I could get myself to do more cooking, but since it's just me I only ever go for the basics. I have a one-pot Mexican quinoa dish that I make from time to time, but usually I opt for roast vegetables and salad with roast chicken, eggs or pan-fried scallops or prawns or fish.

John I used to make quite elaborate meals, though. He was a good cook.


I think I'm quite ready for another adventure.

I "honey roasted" a small joint of gammon yesterday and couldn't resist eating a little of it when it had cooled.

Delicious !!

But tonight I'm going to make a proper hot meal of it by adding some creamy home cooked mashed potatoes and some mushy peas.

Then I'll freeze what's left for a sandwich .. down the line grin

Draclvr …. Gammon is the term for the hind legs of pigs that have been cured in a similar way to bacon.

And after being cooked is then called “ham”.

So it’s available in strips, like bacon, or joints like pork.
